This week I didn’t do much cooking but I promise I ate. This is one of my family’s favorites. My son is more of a healthier eater and well out of all meats chicken is one he will actually eat. So what is my favorite of the week? Lemon pepper chicken!
It is one of my go to’s for a quick and easy meal. If in a rush or just tired and ready to eat you’ll want to make this.
For this meal I used the following ingredients:
Lemon pepper chicken:
Rice with broccoli:
Slices of Avocado
So how is it an easy meal to make you say? Well, I always cube the chicken and season it with the lemon pepper seasoning first. Then once that is finished I start on my rice. (Then I put the broccoli to cook as well, for this meal) While my rice is cooking I put the chicken in a pan to cook. This is the quickest way to have everything done at the same time. Oh and the lemon juice I squeeze it on after the chicken is done. If you have time to marinate the day before that is great but if not I don’t add the lemon juice until the end. Believe me I’ve tried both ways and it works best to add the lemon juice at the end rather than before you cook it when not marinated the day before.
I have also made this meal with different sides. Other sides I have made are rice with corn, corn on the side, mix of corn and green beans, and broccoli and cheese. Sometimes I simply just have rice and the lemon pepper chicken. Always get creative with what you already have in your pantry.
